Craving an easy way to make cupcakes this season and still looking extra Christmasy?
First and foremost, let's face it.
A lot of us don't have time or are slightly scared of messing up a cupcake recipe.
I conveniently used the Betty Crocker recipe for these Red Velvet cupcakes and did the Cream Cheese Icing myself.
However, if you are going to do recipes for yourself, I recommend the Hummingbird Recipe, which I have tried before - but I recommend using red food colouring gel.
Cupcakes
30 ml vegetable oil (2 tbsp)
60 ml water (4 tbsp)
2 medium free range eggs
Icing
4 oz unsalted butter softened
4 oz cream cheese softened
2 cups powdered sugar
1 teaspoon vanilla extract
the eggs, oil, water and cake mix gently together and whisk (by hand or electric mixer) for 2-3 minutes until smooth and creamy.
the mixture evenly into the cupcake cases.
in the center of the oven for 15-17 minutes or until a rounded knife inserted into the deepest part of a cupcake comes out clean. Leave to cool.
Icing:
In a large bowl, beat together the butter and cream cheese with an electric mixer. With the mixer on low speed, add the powdered sugar a cup at a time until smooth and creamy. Beat in the vanilla extract. (Or just buy the Betty Crocker Cream Cheese Icing ready!)
Pour the icing over the cupcakes, get a marshmallow and colour writing icing and make the face with the black one and the nose with the red. Place the marshmallow on the icing, and trace around his face with writing icing to make a scarf. Then add the arms and the buttons and you're pretty set to go!
And there you are! Easy peasy lemon squeezy if you use all the ready made things!
